TL;DR / Quick Summary
Every piece of fried food is a work of precise art. The batter is thin as a cicada's wing, locking in the most delicious essence of each ingredient. This is Taipei's most supreme tempura temple.
In Taiwan, tempura is often misunderstood as ordinary fried food. But at Mudan (牡丹), tempura has been elevated to an art form. As the only Michelin 2-star tempura restaurant in all of Taiwan, this place demonstrates the ultimate mastery over oil temperature, batter, and ingredients.
1. The Space: Minimalist Zen
Mudan's space is extremely understated and elegant, with just a single counter bar. All attention is focused on the deep-fry pan in front of the chef. You can hear the pleasantly melodic sound of ingredients hitting the oil—the most wonderful amuse-bouche for the ears.
2. The Cuisine: Thin as a Cicada's Wing
The tempura batter here is extremely thin—nearly transparent—yet it perfectly locks in moisture and umami.
- A Commitment to Tsukiji: Although locally operated, the ingredients are almost synchronized with Japan.
- Conger Eel (Anago / 星鰻): One of the signature dishes. A 30-40 cm conger eel in the hands of the master chef results in a crispy exterior and tender interior, full of the fragrance of the fish—both sight and taste are profoundly moving.
- Sea Urchin with Shiso (海膽大葉): Sea urchin wrapped in shiso leaves and deep-fried; the exterior is crispy while the sea urchin inside maintains a half-raw, creamy texture—a perfect union of hot and cold.
