TL;DR / Quick Summary

We ate at Lin Dong Fang, Liu Shandong, and Yong Kang. Only one can be crowned the King of Beef.

Battle of the Broths: Top 3 Beef Noodles in Taipei

Beef Noodle Soup (Niu Rou Mian) is the national dish of Taiwan. Every Taiwanese person has a strong opinion on who makes the best bowl. We decided to settle it by eating at the three heavy hitters.

1. Lin Dong Fang (The Late Night King)

  • The Broth: Herbal, medicinal, light but complex. Not cloudy.
  • The Beef: Beef shank. Tender but still has some bite.
  • The X-Factor: The spicy butter (beef fat). It transforms the soup completely.
  • Verdict: Best for late night (open till 3 AM). It feels healing.

2. Liu Shandong (The Micheline Bib Gourmand)

  • The Broth: Heavy bone broth flavor. Very rich.
  • The Noodles: Thick, udon-style noodles. Very chewy.
  • The Vibe: Hidden in an alley near Taipei Main Station. You sit on small stools in a crowded room.
  • Verdict: The best "working man's" noodle. Rustic and filling.

3. Yong Kang Beef Noodles (The Spicy Classic)

  • The Broth: Sichuan style. Spicy, oily, and heavy on soy bean paste.
  • The Beef: Huge chunks of meat.
  • Verdict: Good for tourists or those who love heavy flavors. It's a bit pricey now, but consistent.

The Winner?

For us, it's Lin Dong Fang. That spicy butter is just unbeatable. It's flavor you can't find anywhere else in the world.
